Tough one to call if it's at 160. However, taking it to 175 just makes it that much easier for Jones. Roy was at his absolute best at 168 where he was never really a big light-heavyweight. Harry Greb was never much bigger than 160.
I realize Greb is a god here and that he has beaten many bigger fighters. His constant azzwhuppins he dished out to Jack Dempsey are legendary. Still, if you look at all the trouble Greb had with Gene Tunney, I can't see Jones having much trouble with Greb, especially not at 175.
This fight would be much more competitive at 160. Roy was still a boy with loads of talent. Greb was a seasoned vet with a ton of experience. He would have a lot of answers for Roy and a decision could go either way. It's either Greb dragging Roy out of his game or going through hell in trying to slow Roy down, only to lose on points. It's up in the air.
At 175, I don't see Greb doing well against Jones at all.

Roy would beat a game Harry over 15 rounds, but he would have definite moments of trouble.

I'd go with Jones. His speed and higher skill level would be too much for Harry Greb. I don't see, however, a knockout happening here. It would be close UD win for RJJ.
jones has to work overtime, but eeks out a split decision in a closely fought contest.
