Yes it will be fine. Those little "lines" of fat are marbling--which make your meat tastier and tenderer. They are present in all meats to a certain extent--and as your jerky dries, they will provide some oils and fat that keep it from getting crispy.
Im currentlly making beef jerky and I trimmed as much fat as i could, but there are still small lines of fat within the meat and Im wondering if my jerky will be okay anyway.
