Well,you have it pretty easy if the only thing she won't eat is mushrooms. Even with most recipes with mushrooms you can leave them out or use a substitution.

Caesar Salad ; Iceberg Lettuce,Parmesan Cheese,Seasoned or Caesar Croutons,Black Pepper and some Caesar dressing. It's as simple as that.
**If you're not much of a baker I'd stop by a local bakery and just buy her a cake. Whatever you know is her favorite. Or if she's not picky go with something more unique. Like a Chocolate Cake with a Butter Cream frosting and decorated with Strawberries. Or a Carrot cake. I love Carrot cake with a Cream Cheese Icing. It doesn't taste like most would imagine. It's not like eating carrots,so much better!

You can also do roasted herbed rolled lamb with pototates.
Go exotic and do curried chicken with red kidney beans and rice.
