One dish entree: "Roasted Cornish Game Hens with a Root Vegetable Medley"
-Each game hen would be stuffed with wild rice pilaf made ahead of time (wild rice, chicken broth, shallots, garlic, toasted hazelnut or almonds). Drizzle the hens with olive oil, garlic & onion powder, salt & pepper. These should be roasted in a separate pan.
-In a second roasting pan, add in wedges of root vegetables: whole shallots, beets, turnips, garlic cloves (left in the skins), parsnips, fingerling potatoes, carrots & celery. Drizzle with olive oil, sea salt, freshly ground black pepper and a few sprigs of thyme.
Roast the game hens until the juices run clear. I can't tell you the cooking times because I don't know how many you will be cooking but you get the idea.
Place settings/atmosphere: Low lights with lots of votive candlelights for accents. A crisp white table cloth with fresh flowers in a vase and several single flowers laying near the votive candles. Plating the food: On each plate place a cornish hen in the center of the plate and then a variety of the root vegetables around the hen. Place a sprig of fresh rosemary or thyme on the plate as a garnish.
Music: The album "Kind of Blue" by Miles Davis (turn the volume on low... so the melody can find it's way in between the spaces of conversation.
Greetings: I would greet everyone with a Kir Royale. A cocktail of Kir (currant flavor) with a touch of champagne.
Dress code: Dressy casual or business casual (as called in the States)
Dinner conversation: I have done this before at dinner parties. Write down a few questions: Place them on small pcs. of paper, then fold them. During dinner have everyone choose one. Questions are read then everyone can give an answer.

As a nod to their Norwegian heritage, celebrity chef and model Sophie Dahl and her family ate blini (mini pancakes) topped with smoked salmon every Christmas Eve. Now Dahl makes the blini with wonderfully earthy buckwheat flour and serves the salmon-topped hors d'oeuvres at parties throughout the year.

Instead of using high-calorie coconut milk, Sue Zemanick of New Orleans' Gautreau's substitutes coconut water (the clear liquid inside young coconuts) and a touch of full-fat sour cream to add richness to this curry sauce. Lime juice and red curry paste contribute superb tanginess and flavor, too.

Su-Mei Yu of San Diego's Saffron restaurant roasts cauliflower with spices and slivers of kumquat. The turmeric, white peppercorns, and coriander seeds are beneficial to the respiratory and circulatory systems; the kumquat, with its sour and bitter tastes, warms the chest and eases coughs.

Coconut-Mango Frozen Yogurt
Coconut-Mango Frozen Yogurt
Sophie Dahl's coconut frozen yogurt with a swirl of mango is like a tropical take on the classic orange Creamsicle. The method here, which does not require any special equipment, gives the frozen yogurt a fluffy, slightly icy texture, like a granita. For more creaminess, freeze the coconut base in an ice cream maker and swirl in the mango as soon as the frozen yogurt is done.

Yogurt Panna Cotta with Pineapple Granita
Jansen Chan, the pastry chef at Manhattan's Oceana, grew up eating a Chinese dessert called "almond Jell-O" ― essentially an almond-flavored panna cotta. Then he had his first real Italian panna cotta: "It was plainer, but so much richer," he recalls. Here, Chan toys with the classic, creating a version with Greek yogurt and nonfat sour cream that is luxuriously creamy, yet still low in fat and calories.
I don't want loads of bowls of food on the table because that's common and not very impressive. I'm looking for dishes that are served as an entire dish and I also what something that will impress.
Basically I want suggestions on everything from food to wine to how it's served and also the atmosphere, the kind of music, the way the table should be set, the way guests are met and the type of conversation and also the dress code.
