Deviled eggs
Fruit tray with little cups filled with vanilla or strawberry yogurt for dipping
Make your own veggie dip with non-fat PLAIN Greek yogurt, dill weed, garlic powder, onion powder, salt, parsley and black pepper. Again, put them in single serving cups-2 tablespoons each. Way cheaper and healthier than buying pre-made stuff.
The little cups prevent the likeliness of double-dipping and spreading germs.
Make your own punch and frozen juice ring. Use real fruit juice and freeze it in a couple plastic bowl, with chunks of fresh fruit in it. Make the punch with the same kind of juice or a couple kinds of juice and ginger ale.
If you're allowing guests to drink alcohol, have them bring an 18 pack of their favorite beer to share.
Get the veggies at the local farmer's market. You save a couple bucks buying directly from the farmers, usually.
Bottled water-with a few cans for recycling.
Do cupcakes instead of a giant cake.
A reception doesn't have to be traditional to be fantastic.
Yes, you have a option to save money as you said your mother's friend does catering. But to hire a professional caterers in less price is also a great option. Because they can better suggest you which are the dishes you have to involved in your wedding reception.
Veggie, fruit, cheese, and cold cut trays are great, but so is smoked salmon dip on a rice cracker with capers... We did our own food at our wedding and I got quite a few ideas from online.

We are possibly going to do either all or some of the food ourselves to save money. A friend of my mothers does catering so she will handle the refilling and keeping things moving and clean.
