Make some Middle-Earth themed snacks for everyone, a particular fan favourite is the Elven Lembas bread.

depending on how much you want to spend you could get some foam swords from ebay and all have sword fights outside (or inside if you have a big house).
Maybe later on all chill out and watch one of the movies, have a vote between everyone for which one to watch. For party music download the film soundtracks and play them in the background during the rest of the night perhaps.
If you really wanted to go all out on this, get a couple of your favourite guests or family members to help deck out the house with crazy decorations beforehand. A room filled with cotton wool and tiny plastic spiders, a room filled with golden chocolate coins and a dragon (a plush, or just a drawing or something, or a cat/dog in a costume if you have one!), and other scenes from the movies. But that could get costly and would take quite a lot of planning and a fair bit of time during the day to set everything up. But it would certainly be a party to remember!
If you're looking for smaller ideas, maybe make your party like Bilbo's in Fellowship of the Ring - have a big banner up inside in the same style as his, have a big notice on the front door like this one if you have a way of printing it (or you could just copy the writing style yourself)
