If they have any big box stores near you and are member like Costco or BJs, you can save yourself a lot of time and money by buying some of their large platter items. This is a just of the items that can be served cold that I remember. If you are not a member, some of these store will give you a day pass. Call first.

Large Shrimp Platter

Marinated Shrimp

Wrap Sandwiches

Chicken Salad (Serve with crackers or mini croissants)

They also have cheese platter and dried or summer sausage

Also check the frozen food section for desserts

Do you really mean you want to serve all cold foods? It seems many of your dishes are the type of foods that would not taste good cold and the wrappers or batters would be get mushy when refrigerated overnight, if not reheated. These are few alternatives to some of your foods. You will need at least 50 of each of your appetizers, if not more. It would be easier to have fewer choices and just serve more of each.

Prepare summer rolls instead of spring rolls. Most spring rolls are served hot.



keep it simple:

*sandwiches are great, make sure that you have plenty of them - for 50 people you need between 200-250 sandwich quarters, or 150 halves.

*Salads - pasta salad, potato salad, veggie salads

*crisps and dip are also a great idea

*fresh sliced vegetables, carrot sticks, pepper sticks, celery.

*A bowl or two of hummus.

*crackers

I will be honest - your amounts are pretty low. Better to have fewer items, but more of each

I'm doing a buffet for approximately 50 people. It all has to be cold food and prepared the night before. My rough list so far will be:

A few selections of crisps and dip

Sandwiches (cheese and ham, cheese and tomato, egg mayo, ham)

Pineapple on sticks

20x mozzarella dippers

24x vegetable spring rolls

20x FILO prawns

24x mini hotdogs

36x mini pastry bites

24x assorted chicken skewers

20x chilli cheese bites

And some mini sausage rolls

Any opinions on this would be extremely helpful. This is my first time doing it so I'm thinking is there too much variety? Not enough? Any opinions on quantities of certain foods? Suggestions on foods that don't work well or replacements? Or foods that won't turn out well cold the day after cooking? Please feel free to say it's all rubbish, I need honest opinions :D thank you xxx
