You really need to think about safe food handling; you'll need a large steam table and cold table.
If it were me, I'd do a baked potato bar or nacho bar because the potatoes or chips are easier to maintain...potatoes stay hot in foil and chips stay crispy in a bowl. Flour or corn taco shells are best if at least heated and they don't stay warm for long...and corn shells are best fried, but will get rubbery after sitting a bit.
Anyhow...taco bar toppings:
Meat - Shredded chicken and seasoned ground beef
Produce - diced tomato, shredded lettuce, green onion, cilantro, sliced olives, diced avocado, sliced lime, jalapenos
Condiments - Hot sauce, sour cream, salsas
Shredded cheese - Fiesta blend would probably be best
