bellini's are super easy. You can buy them ready made then just add toppings :-

What about a cheese board? Crackers, cheddar, stilton, brie, grapes, apples, cherry tomatoes, and a chutney on the side.

candy turtles! you put a bunch of mini pretzels on a cookie sheet (on a pan). put a Rolo or caramel & chocolate candy on the center of each pretzel, and a pecan half on top of that. stick in the oven at 300° for 4 minutes. it's delicious hot, room temperature, or chilled!
here's an idea: get some small dixie cups and put ranch dressing or some kind of dip then add celery, carrot, and other veggies that have been cut so they fit in the cup too. This way each person can just grab a cup that is ready to eat. This works well with 7 layer dip and chips too. Hope this helps!
buy some of those chinese/indian platter packs with the samosa's, spring rolls, pakoras etc. You can pick them up cheap enough and there simple to make
