For 40-60 guests, I'd go with 2 half pans of each entree. 3 if you want to be safe and enjoy leftovers. ;) Im assuming by entrees you mean something like kahlua pork, teriyaki chicken or steak? Potato Mac salad, rice & a green salad make delicious sides for luaus. Say 3 to 4 half pans of rice, 2 big salad bowls of potato/mac & 3 of green salad. Party city, smart & final or the 99 cent store have good choices of salad bowls as well as inexpensive half pans. For appetizers you should assume 2 to 3 pieces of each choice per person. If one of your appetizers is a fruit platter, have one for the table & two for backups. With no air conditioning you can use ice baths for cold items. It's a little bit of a panic to figure out catering services, particularly for large scale parties. If you are unsure about the servings of food and appetizers then you can choose caterers who will work with your budget.
I am holding a 30th luau birthday for myself in august and i have 80 people i am inviting. I figure maybe 40-60 will show. I dont want to many hot foods due to no air condition so i was thinking of just having two entree choices plus 1-2 sides and salad. Also for appetizers i was thinking 3-4 different ones. But i am not sure how much to do of each entree and appetizer.
right now i have 6 half trays from this buffet kit i just bought at party city.
