I have an easy recipe for a cake that tastes great but it is very easy to make.
This is called a Torte but it is not a torte in the traditional sense. (tortes are usually made with ground nuts in place of or in addition to flour)
Chocolate Torte
Cake:
1 3/4 Cup flour
1 3/4 Cup sugar
1 1/4 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
2/3 Cup butter
4 squares unsweetened chocolate melted and cooled
1 1/4 Cup water
1 tsp vanilla
3 eggs
Filling#1
6 ounces semi sweet or sweet chocolate
3/4 Cup butter
1/2 Cup chopped toasted almonds
Filling #2
2 Cups whipping cream
1/4 Cup sugar
For the cake..Grease and line with parchment then grease and flour 2 pans, 9 inches
In large bowl of mixer combine flour, sugar, baking soda, salt, baking powder, butter, chocolate, water and vanilla.
Beat at low speed to blend then 2 minutes at medium speed, scrape bowl.
Add eggs and beat 2 minutes longer.
Pour batter into pans and bake 30 to 35 minutes until cake tests done.
Cool on wire rack then remove from pans and cool completely.
Split cakes so you have 4 thin layers. (don't stress if they are not perfect no one will notice)
While cake is baking Melt the semi sweet or sweet chocolate with the butter.
Stir in the chopped toasted nuts.
Let this mixture cool until very thick. Should be thick but still able to be spread.
Whip cream with sugar.
Assembly
Place one cake layer on serving platter
Top with 1/2 the chocolate butter nut mixture.
Place another cake layer on top of chocolate
Top with a good portion of whipped cream
Top with cake then more chocolate mixture
top with cake and whipped cream.
Do not frost sides, allow the fillings to sort of ooze out
If you want make chocolate shavings to decorate the top of the cake.
Serve with any left over whipped cream.
Store left over cake in refrigerator.
